Peanut Butter Dates with dark Chocolate and Sea Salt

This one is one of my favorites. Why? Well that’s easy. It’s a non-bake recipe. These are my favorites. All you need is some pitted dates (try to get the nice juicy medjool dates) and fill them with your favorite peanut butter. I use two spoons to get the right amount in the dates.

Lay them all out on a plate and start working on the chocolate. I recommend dark chocolate (the higher the cocoa amount the better) but obviously you can use whatever chocolate you’re into. Melt the chocolate either in a chocolate melting pot (I got some links for that at the end of the blogpost) or use a bowl with hot water. Put a smaller bowl with the chocolate pieces in the hot water (make sure the water doesn’t jump in the bowl with the chocolate).

Once your chocolate is liquid, pour it over your dates (or just cover them a little) and sprinkle some salt on them.

I usually put them in the freezer for an hour or so before I serve them. Very often there are some already missing. I just can’t hide stuff from my kids and husband. This snack is not low-carb or low-calorie but its still a lot healthier than most candy options. Enjoy it!
